Sick Mom Crockpot Chicken

4 boneless skinless chicken breasts - frozen is okay (of course we use Marketday)
1 box rice pilaf
several splashes of your favorite zesty italian dressing

spray crockpot with Pam
put in chicken and splash with dressing
add 1 cup water
put in pilaf and seasoning packet
add another cup water and splash again with dressing.

Cook on low all day. Splash with some more dressing if it seems to be getting dry.

This was a hit with the kids and not just cause I served it with whole cranberry sauce. I used the dressing to keep the chicken moist - mostly cause that's usually what I marinate it in and the kids love it. The pilaf comes out sort of risotto-y. Very comforting when you are sick.

After I put this on to cook I took some Nyquil and slept all day. I was SO HAPPY to have dinner all ready to go!

try the "sick mom roast"

1 roast (cheap, fatty and frozen is fine!)

1 pkg dry italian mix
1 pkg dry ranch mix
1 pkg dry brown gravy mix
1/2 cup water

put mixes and water in crock, mix up. Add meat. If not frozen, turn to coat. Cook on low for 6-8 hours. (if frozen, cook on high for at least 4 hours, then turn down).

Yup...yummiest stuff...makes its own gravy/juice. No basting, no nothing. Works great with mashed taters....

Sorry you've been ill. Phooey to that! The chicken concoction does sound good and easy.

Linda - If I had all that on hand I would have made it!

Lisa - it was nice and soothing. Not something I want all the time (I'm more of a spicy girl) but it was perfect for that day. And yes - everyone is sick... yuck
