Gawd I love these. I only make them in the summer and am never sure why I don't ever make more at one sitting? Because Scott and I usually eat them all quite quickly? Possibly...
Roast Chick Peas
1 can chick peas rinsed and drained and drained on paper towels
1 T olive oil
1-2 roasted garlic bulbs (I roasted a bunch this morning for various recipes)
salt
chili powder
In a ceramic pie plate combine oil, garlic and spices. Mush up the garlic a lot so it will be evenly spread. Add chick peas. Roast at 350 for 1+ hours. Usually when the hour is up I just leave these in the hot oven for another hour or two.
I should say this makes about 1 cup of the finished product.
delicious. Perfect with a drink about 4 on a Sunday afternoon. Hmmmm... guess what I'm doing RIGHT NOW?!
Enjoy!

Very very tasty. I hope you like them!
Oh, these sound great. I too love roasted chickpeas. But never thought of putting the roasted garlic with them. Nice!
Wow Lisa - I can't believe you have never had these. I will definitely spice them up a bit more next time. But so perfect with a drink on a hot summer night.
I absolutley swear that those roast tomatoes in garlic were what my 4yo son took for snack on his first day of kindergarten. He wanted to add a decanter of Shiraz and a loaf of Calabrese bread, but I told him some people have a gluten allergy, so no bread!
His tastes are so adult! Thankfully his teacher loves the smell of garlic - he is INFUSED with it.
I meant chick peas...I am eating tomatoes right now and my brain is going into lycopene overload....
My favorite school lunch was peanut butter and kiwi jam on an english muffin. Shortly after that - we switched my son to hot lunch.
